dc.description.abstract	งานวิจัยเรื่องพัฒนาการของหลักสูตรและการเรียนการสอนวิชาการแกะสลักของหลักสูตรคหกรรมศาสตร์ในสถาบันอุดมศึกษา มีวัตถุประสงค์เพื่อศึกษาพัฒนาการของหลักสูตรและการเรียนการสอนวิชาการแกะสลักในหลักสูตรคหกรรมศาสตร์ในสถาบันอุดมศึกษาในด้านปรัชญา แนวคิด จุดมุ่งหมาย เนื้อหาวิชา กิจกรรมการเรียนการสอน การวัดและประเมินผล และศึกษาความคิดเห็นของผู้เชี่ยวชาญ ผู้สอนและผู้ที่เกี่ยวข้องกับการเรียนการสอนวิชาการแกะสลัก เพื่อเสนอแนวทางการจัดการเรียนการสอนวิชาการแกะสลักในหลักสูตรคหกรรมศาสตร์ในอนาคต ผลการวิจัยพบว่า มีการเรียนการสอนวิชาการแกะสลักมาตั้งแต่สมัยกรุงสุโขทัยที่จัดให้มีการเรียนการสอนกันภายในตำหนักของเจ้านายฝ่ายในที่อยู่ในพระบรมมหาราชวัง เป็นการเรียนการสอนกันนอกระบบ สมัยกรุงรัตนโกสินทร์การเรียนการสอนวิชาการแกะสลักได้ขยายถึงคนไทยทั่วไปได้มีโอกาสเรียนรู้วิชาการแกะสลักสืบทอดต่อกันมาจนกระทั่งได้จัดวิชาการแกะสลักอยู่ในระบบโรงเรียนในหลักสูตรระดับต่างๆ และจัดให้มีรายวิชาต่างๆ อยู่ในหลักสูตรคหกรรมศาสตร์ การเรียนการสอนมุ่งเน้นการปฏิบัติเพื่อเป็นการอนุรักษ์ศิลปวัฒนธรรม มุ่งให้ผู้เรียนเกิดทักษะ เกิดความริเริ่มสร้างสรรค์ นำไปใช้ในชีวิตประจำวันและสามารถนำไปประกอบอาชีพได้ การศึกษาความคิดเห็นของผู้เชี่ยวชาญวิชาการแกะสลัก ผู้สอนวิชาการแกะสลักและนักอาชีพแกะสลัก มีความคิดเห็นตรงกันว่าเป็นวิชาที่ควรเผยแพร่ให้คนไทยได้เรียนรู้ และควรขยายการเผยแพร่ออกสู่ต่างประเทศ ควรจัดให้เป็นวิชาบังคับในหลักสูตรประถมศึกษาและมัธยมศึกษาในกลุ่มการงานพื้นฐานอาชีพ และจัดวิชาการแกะสลักให้เป็นวิชาโทคหกรรมศาสตร์สาขาวิชาการแกะสลักในระดับปริญญาตรี	en
dc.description.abstractalternative	The objectives of this study were to 1) analyze the development of curriculum and instruction on garnishing subject of home economic curriculum in higher education institution ; and 2) summarize the instructors and experts' opinions on teaching garnishing. The findings revealed that the garnishing teaching has been well known since Sukothai period. The garnishing was taught in Thai royal families as a special subject for women. In Rattanakosin period, the garnishing subject was taught in schools for all people and also it was set as a course in home economic curriculum. The purposes of teaching and learning on garnishing have been emphasized in students' practices for cultural heritage, creativities, and applications in everyday life or in their careers. The finding of opinions showed that garnishing should be promoted to every Thai people and to other countries. It should be one required course of the foundation education in elementary and secondary school curriculum.
