| Abstract: | การศึกษาครั้งนี้เป็นการศึกษาเชิงพรรณนา ณ จุดเวลาใดเวลาหนึ่ง มีวัตถุประสงค์เพื่อศึกษาสภาพการสุขาภิบาลอาหารโรงอาหารของโรงเรียนมัธยมศึกษาในจังหวัดบุรีรัมย์ จำนวน 68 โรงเรียนและศึกษาร้านอาหารที่จำหน่ายอาหารในโรงอาหาร จำนวน 468 ร้าน โดยแบ่งเป็นร้านปรุงสำเร็จร้านอาหารพร้อมปรุง ร้านเครื่องดื่มและของหวาน เก็บข้อมูลระหว่างเดือนธันวาคม พ.ศ.2547 ถึง กุมภาพันธ์ พ.ศ.2548 โดยใช้แบบสังเกตสภาพการสุขาภิบาลอาหารที่ผู้วิจัยสร้างขึ้น ผลการศึกษาพบว่า โรงอาหารส่วนใหญ่ไม่ผ่านเกณฑ์ที่ตั้งไว้คือ จำนวน 64 แห่ง (ร้อยละ 94.2) ทั้งนี้ในภาพรวมพบว่าโรงอาหารของโรงเรียนในเขตเทศบาลมีสัดส่วนการผ่านเกณฑ์สภาพการสุขาภิบาลอาหารในสัดส่วนที่สูงกว่าโรงอาหารในโรงเรียนนอกเขตเทศบาล แต่ไม่มีความแตกต่างอย่างมีนัยสำคัญทางสถิติ (P > 0.05) โดยรายละเอียดที่ทำให้โรงอาหารไม่ผ่านเกณฑ์คือ การจัดการด้านขยะ น้ำเสียและสิ่งปฏิกูลไม่ดี รวมถึงการมีแมลงวัน แมลงหวี่รบกวน ส่วนสภาพการสุขาภิบาลอาหารร้านอาหารพบว่า ส่วนใหญ่ผ่านเกณฑ์มากกว่าร้อยละ 50 ของจำนวนร้านทั้งหมดในแต่ละประเภท โดยพบว่า ร้านปรุงสำเร็จ ผ่านเกณฑ์ จำนวน 136 ร้าน(ร้อยละ 68.34) ร้านพร้อมปรุง ผ่านเกณฑ์ จำนวน 95 ร้าน(ร้อยละ 54.91) ร้านเครื่องดื่มและของหวาน ผ่านเกณฑ์ 52 ร้าน (ร้อยละ 58.42) ทั้งนี้ในภาพรวมพบว่าร้านจำหน่ายอาหารของโรงเรียนในเขตเทศบาลมีสัดส่วนการผ่านเกณฑ์สภาพการสุขาภิบาลอาหารในสัดส่วนที่สูงกว่าร้านจำหน่ายอาหารของโรงเรียนนอกเขตเทศบาลอย่างมีนัยสำคัญทางสถิติ (p≤0.05) โดยรายละเอียดที่ยังคงไม่ผ่านเกณฑ์อยู่ในหมวดของผู้ปรุง ผู้เสิร์ฟ เช่น ไม่ผูกผ้ากันเปื้อนสีขาว ไม่สวมหมวกหรือเน็ทคลุมผม เป็นต้น ผลการศึกษาแสดงว่าโรงอาหารและร้านจำหน่ายอาหารในโรงอาหารเหล่านี้ ยังไม่มีสภาพการสุขาภิบาลอาหารที่ดีพอเพื่อความปลอดภัยในการบริโภค ไม่ว่าจะเป็นสภาพการสุขาภิบาลอาหารในด้านกายภาพ สุขวิทยาผู้ปรุง ผู้เสิร์ฟ จึงควรที่ผู้เกี่ยวข้องทุกคนจะต้องช่วยกันพัฒนาการสุขาภิบาลอาหารในโรงเรียนให้ดี ถูกต้อง เพื่อความปลอดภัยของผู้บริโภคต่อไป |
| Other Abstract: | This cross-sectional descriptive study aimed at examining the sanitary condition of high school cafeterias in Buriram Province, Thailand. Sixty eight cafeterias and 468 food shops in 68 high schools were included in the study. The data were collected during December 2004 – February 2005 by using a structured observation. The result showed that most of the school cafeterias ( 94.2 percent) did not meet the food sanitary standard condition while the conditions for school cafeterias in municipal area were better than those outside municipal areas, their difference was not statistically significant. Majority of cafeterias failed to meet the food sanitary standard condition due to poor waste management, improper wastewater and garbage treatments and disturbance from flies and fruit flies. Concerning food shops with the cafeterias, more than 50 percent met the food sanitary standard condition. These included 68.3 percent of cooked-food shop, 54.9 percent of made-to-order food shops, and 58.4 percent of desert shops. The conditions of food shops in the municipal areas were significantly better than those outside the areas. Cause of failure to meet the food sanitary standard condition of the food shops was the improper health behavior of food vendors, that was, they did not wear white apron and white cap on hair net. In conclusion, this study results revealed that a great number of school cafeterias did not meet the food sanitary standard condition. Their improvement is there fore necessary to protect the students from food-born illnesses. |
