| Abstract: | การวิจัยครั้งนี้มีวัตถุประสงค์ เพื่อศึกษาและเปรียบเทียบการรับรู้เกี่ยวกับการสุขาภิบาลอาหารของผู้ประกอบการจำหน่ายอาหารในโรงเรียนมัธยมศึกษา กรุงเทพมหานคร ตามตัวแปร การอบรมการสุขาภิบาลอาหาร ระดับการศึกษา แหล่งข้อมูลข่าวสารและประสบการณ์ในการประกอบอาหาร ผู้วิจัยใช้แบบสอบถามที่สร้างขึ้นนำไปสอบถามยังกลุ่มประชากร ผู้จำหน่ายอาหารในโรงเรียนมัธยมศึกษา จำนวน 117 โรงเรียน กลุ่มตัวอย่างแบบเจาะจงของผู้ประกอบการ จำหน่ายอาหารในโรงเรียน ที่เป็นร้านจำหน่ายอาหารคาว จำนวนโรงเรียนละ 4 คน ได้ขนาดกลุ่มตัวอย่าง จำนวน 468 คน ผู้วิจัยได้รับแบบสอบถามฉบับที่สมบูรณ์กลับคืนมา จำนวน 447 ฉบับ คิดเป็นร้อยละ 95.52 แล้วนำข้อมูลที่ได้มาวิเคราะห์หาค่าร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐานทดสอบค่า "ที" (-test) และการวิเคราะห์ความแปรปรวนทางเดียว นำมาวิเคราะห์โดยใช้โปรแกรมคอมพิวเตอร์สำเร็จรูป SPSS ( Statistical Package for the Social Science Version 11) ผลการวิจัยพบว่า 1. ผู้ประกอบการจำหน่ายอาหารในโรงเรียนระดับมัธยมศึกษา กรุงเทพมหานคร มีการรับรู้เกี่ยวกับการสุขาภิบาลอาหาร โดยเฉลี่ยอยู่ในระดับดี 2. ผู้ประกอบการจำหน่ายอาหารในโรงเรียนที่เคยได้รับการอบรมการสุขาภิบาลอาหารมีการรับรู้เกี่ยวกับการสุขาภิบาลอาหารและนำการรับรู้ไปปฏิบัติดีกว่าผู้ที่ไม่เคยได้รับการอบรม อย่างมีนัยสำคัญทางสถิติที่ระดับ .05 3. ผู้ประกอบการจำหน่ายอาหารในโรงเรียนที่มีระดับการศึกษาต่างกันมีการรับรู้ เกี่ยวกับการสุขาภิบาลอาหารและนำการรับรู้ไปปฏิบัติ ไม่แตกต่างกัน 4. ผู้ประกอบการจำหน่ายอาหารในโรงเรียนที่ได้รับข้อมูลข่าวสารต่างกันมีการรับรู้เกี่ยวกับการสุขาภิบาลอาหารและนำการรับรู้ไปปฏิบัติแตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ.05 5. ผู้ประกอบการจำหน่ายอาหารในโรงเรียนที่มีประสบการณ์ในการประกอบอาหารต่างกัน มีการรับรู้เกี่ยวกับการสุขาภิบาลอาหารไม่แตกต่างกัน ส่วนการนำการรับรู้เกี่ยวกับการสุขาภิบาลอาหารไปปฏิบัติ แตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 |
| Other Abstract: | The purposes of this research were to study the level of perception of food sanitation among food sellers in secondary schools in Bangkok Metropolis in relation to those variables namely, training on food sanitation ,level of education, sources of information and cooking experiences. The constructed instruments were sent purposively random sampling to 468 food sellers from 117 secondary schools, 447 questionnaires, accounting for 95.52 percent were returned. The data were then analyzed in terms of percentages, means, standard deviation. The t-test and F-test. The results of the study revealed as follows: 1. The perception of food sanitation among food sellers in secondary schools in Bangkok Metropolis was at good level. 2. The perception of food sanitation among food sellers who received the training on food sanitation had better perception than those who did not received such training significantly at the .05 level. 3. The level of education among food sellers showed no differences in their perception in food sanitation and their applications. 4. Difference in sources of information among food sellers showed significant differences at the .05 level in perception of food sanitation and their applications. 5. Difference in cooking experiences showed no differences in their perception of food sanitation, while there were among food sellers significant difference at the .05 level for their applications. |
